Personally I would go with the Centerforce dual friction setup. Should be plenty for your setup. I've used it before in my streetcar running mid 10's behind the 528 Hemi and it start getting into trouble when launching above 4000rpm with stickies. So should be good enough to handle the 500+ hp on st...

Best power steering option I had was /6 set up which is tighter. Used it with my 360 Dart and it was great.
